Cold pea and mint soup

A nice and refreshing chilled soup, perfect for summer.

Ingredients:
- 600g frozen peas
- 10 fresh mint leaves
- 1 white onion
- 1 vegetable stock cube/pot
- 10 cl thickened cream
- 1/2 teaspoon baking soda
- salt, pepper, spices (to taste), shaved parmesan
In a saucepan, bring 1 litre of water to boil with the onion finely chopped and the vegetable stock.
Add baking soda and peas and cook 10 minutes. Stir regularly.
Remove from the heat and add the mint leaves and pepper.
Cover and infuse for 10 minutes.
Keep a few peas on the side.
Pour broth and peas in the bowl of your thermo and blend on speed 7 for 20 seconds.
You can use a colander to remove any lumps.
Serve chilled, in small bowls, with a dollop of thickened cream.
You can sprinkle with salt, pepper, ground chilli and a few peas. You could even add a few parmesan shavings
And for a special YIAH twist, add a teaspoon of Greek Taverna before mixing the broth and peas
