Lemon Fondant (thermomachine recipe)

The perfect snack for after school, light and fluffy ... good for the kids and Mummies/daddies alike

INGREDIENTS:
- 4 eggs
- 170 gr caster sugar
- 180 gr of melted butter
- 125 gr self-raising flour
- 70g of grated coconut + a little for finishing
- Zest of one lemon
- pinch of salt
- 1 teaspoon ground ginger (optional) / Gingerbread spice (YIAH)

Preheat oven at 180 ° C.
In the bowl of your Thermomachine, pour 170 gr of caster sugar, 4 eggs and lemon zest.
Mix on speed 3 for 5 minutes.

Finish by pouring 180 grams of melted butter and a pinch of salt.
Add the teaspoon of ginger or YIAH Gingerbread Spice if you would like to.
Mixer speed 3 for 1 minute.
