Crispy Chicken

Let’s face it, most of us love fried chicken, crispy on the outside and moist on the inside. You can make your own with so many options: hot and spicy, sweet, just change the spices blend Enjoy….

Ingredients for 2 beautiful chicken fillets:
For the marinade:
1 small pinch of Four Spices mix (usually made of peppercorn, ginger, nutmeg and cloves). If you are using Your Inspiration At Home Spices, try our Chinese 5 Spices
2 teaspoons paprika
1 teaspoon ground ginger
Juice of 1 lemon
250 g milk
1 teaspoon tabasco/hot chilli sauce
salt and pepper
For the breadcrumb mixture:
50 g flour
1 teaspoon paprika
1 teaspoon chili powder (or YIAH Smokehouse BBQ Dip mix)
1 teaspoon salt
1 teaspoon pepper
1 teaspoon ground coriander
2 eggs
5 drops of Tabasco/hot chili sauce
80 g of corn flakes
For cooking:
Neutral oil and butter
Cut the chicken into small strips and prepare the marinade.
In a bowl mix the spices
Add the lemon juice, Chilli sauce and milk. Mix well
Add the chicken and let marinate in the fridge for at least 2 hours.
Prepare 3 bowls:
- In the 1st one, mix 50 g flour with paprika, chili, salt, pepper and coriander (or your choice of YIAH spices)
- In the second one, beat 2 eggs and add a few drops of Tabasco.
- In the last one, pour the corn flakes, slightly crushed with the palm of your hand.
Preheat oven at 150 degrees.
Remove the chicken from the marinade (keep the coating on the chicken)
Roll each piece into the mixture with flour
Then dip it in the spiced eggs mix immediately
And finally roll generously in the cornflakes.
The chicken should be completely covered in crunchy breadcrumbs.
In a large frying pan, pour a good amount of oil and a small piece of butter. Heat through without burning.
Reduce the heat and place the pieces of chicken.
Cook for about 3 minutes on each side.
The chicken should be golden.
Place on a cooking tray in the oven for 5 to 10mn at 150 deg.
Tips: if you decide to use YIAH products, you can reduce the number of different spices used and decide if you want to go hot (you can use BBQ pit, Texas Jalapanos), or not (Harb & Garlic, Tuscan style…) pick the flavour you like.
