- 180 gr of melted butter
- 125 gr self-raising flour
- 70g of grated coconut + a little for finishing
- Zest of one lemon
- pinch of salt
- 1 teaspoon ground ginger (optional) / Gingerbread spice (YIAH)
Preheat oven at 180 ° C.
In the bowl of your Thermomachine, pour 170 gr of caster sugar, 4 eggs and lemon zest.
Mix on speed 3 for 5 minutes.
then put 125 gr of flour and 70g of grated coconut.
Mix on sp 2 for 2 minutes.
Finish by pouring 180 grams of melted butter and a pinch of salt.
Add the teaspoon of ginger or YIAH Gingerbread Spice if you would like to.
Mixer speed 3 for 1 minute.
Pour into a mold
and bake at 180 ° C for 25 to 30 minutes, until golden.
Let cool and sprinkle with grated Coconut
