Crunchy Apple Cake

This apple cake has It all: crunchy, moist and deliciously spicy….
ingredients:
For the crumble:
- 100 gr plain flour
- 100 gr brown sugar
- 100 g butter
- 1 teaspoon cinnamon
- 1 pinch of sea salt
For the apple cake:
- 2 apples
- 3 eggs
- 190 gr self-raising flour
- 100 gr double cream
- 100 gr brown sugar
- 2 tbs vanilla sugar
- 65 gr melted butter
- 1 pinch of sea salt
- 20 gr brown sugar
- 1 teaspoon cinnamon or YIAH Country baked Apple Pie spice
Start with the crumble.
Put the flour, brown sugar, cubed butter, cinnamon and sea salt in a bowl.
Mix with fingertips until the mix takes a sandy texture.
Refrigerate.
Peel, core and halve the apples.
In a bowl mix 20 gr brown sugar with a tbsp. of cinnamon.
Sprinkle and rub the apples with the mixture.
Reserve
In the bowl of the thermomachine (or using a mixer), put brown sugar, vanilla sugar and eggs.
Add the cream and a pinch of sea salt.
Mix on speed 2 for 2 minutes.
Pour the self-raising flour.
Mix on speed 2 for 2 minutes.
Finish by adding the melted butter.
Mix on speed 2 for 1 minute.
Pour the batter into a greased loaf pan.
Press the apple halves, with the convex side up
Sprinkle with crumble.
If you want more crunch, sprinkle with slices almonds.
Bake from 1 hour to 1 hour 15 the oven.
