The perfect American Hot Dog Bun

Exactly 2 years ago, I came home from a trip to New York, with the intention to discover the secret of their perfect Hot Dog buns. Finally, today, I am satisfied with the result!
The bread is soft and not too sweet, and has a slight taste of ‘brioche’. The perfect recipe for Street Food lovers.

Ingredients for the bun:
250 g milk
20 g of baker's yeast
25g sugar
500 g flour
1 egg
50g butter
1 teaspoon salt
Ingredients for the cheddar sauce:
10 g of butter
1 teaspoon corn-starch or flour
80 g of milk
100g cheddar
salt pepper
In the bowl of your Thermomachine, pour the milk, sugar and yeast.
Schedule 2 minutes 30 at 37 degree, speed 2.
Add the flour.
Knead for 1 minute 30.
Add egg, salt and butter cut into cubes coarsely.
Knead function for 5 minutes.
Lightly oil a bowl and place the dough.
Let it rest under a damp cloth near a heat source until the dough doubles in volume.
Place the dough on a floured surface.
Split into 10 balls, each between 80 and 100 g.
Tap each ball strongly with the palm of the hand to remove any air.
Wrap the dough
then seal the edges by pinching between two fingers.
Roll slightly on the kitchen bench, in order to obtain a 15cm long cylinder.
Place the rolls on a silicone mat or baking paper.
Place the rolls under a damp cloth while preheating the oven to 200 deg.
Place a small ovenproof bowl full of water in the oven..
Brush each loaf with a little milk.
Cook on a low rack at 200 degrees for about 13 minutes. Monitor the end of cooking.
Allow the bread to cool and prepare the sauce with cheddar: pour the butter, flour, milk, salt and pepper in the bowl of the Thermomachine.
Add the cheddar cheese, cut into cubes.
Cook for 6 minutes at 90 degrees on speed 2.
Your perfect hot dog is nearly ready:
Cut the bread in half lengthwise ..
Add some of the cheddar cheese sauce
Top with sausage
Add ketchup (use Thermoviive homemade if you can )and mustard
