Lemon curd 🇬🇧

This rich and tangy lemon cream is a sheer pleasure .. I enjoy it with a spoon straight from the pot, but it will be perfect for a lemon meringue pie or just in small glasses with a couple of shortbread biscuits .. Simple and extremely quick, this recipe requires very few ingredients .. It also has the advantage of being gluten free !

Ingredients for the lemon curd:
70 g of sugar
2 eggs
40 g butter
1 or 2 lemons
In a saucepan, cook sugar and eggs while mixing
Stir in the lemon juice and mix well
Add the butter,
stir and refrigerate.
